In January 2025, the average monthly cost of preparing one standard portion of Imeretian khachapuri ranged from 6.71 GEL in Batumi to 7.94 GEL in Telavi, with an overall average of 7.02 GEL, - according to ISET. This reflects a slight 0.2% decrease compared to December 2024. However, on a year-over-year basis, the current price is 6.1% higher than in January 2024.

A closer look at individual ingredients shows that most components experienced year-on-year inflation: butter (+15.1%), cheese (+9.5%), yeast (+4.5%), and milk (+1.3%). In contrast, egg (-6.5%) and flour (-0.2%) saw price declines over the same period.

The most significant factor behind the slight decline in the Khachapuri Index is the 3.9% monthly drop in flour prices. Notably, global wheat prices have been declining since October due to a record-high harvest. Given the time lag for international price changes to affect local markets, this decrease was anticipated. Additionally, following the peak of the New Year season, most Khachapuri ingredients experienced slight deflation in January, except for butter (+3.1%) and eggs (+4.3%).
