International School Of Ecoomics at TSU (ISET) published Khachapuri Index.

According to the report, in September 2024, the average price for preparing a standard portion of Imeretian khachapuri reached 6.48 GEL. During August and September 2024, the Khachapuri Index showed an upward trend, with prices increasing by 13% in September compared to July 2024. This rise is primarily due to a 22% increase in cheese prices over the three-month period (July-September 2024). Typically, as autumn approaches, dairy product prices rise due to the need for additional animal feed supplements.

In addition to these seasonal factors, the average price of khachapuri in September 2024 is 10.3% higher than in September 2023. A closer look at price changes shows yearly increases across all khachapuri ingredients: yeast (21.7%), milk (17.6%), butter (12.1%), cheese (10.8%), flour (4.4%), and eggs (1.1%).

Tbilisi currently ranks as the most expensive market for khachapuri ingredients, with the cost of making one standard Imeretian khachapuri at 7.04 GEL, 8.5% higher than the national average. In contrast, Batumi remains the most affordable location, with a single khachapuri costing 6.18 GEL. The 0.86 GEL price difference between Tbilisi and Batumi can be attributed to seasonal tourism patterns. In September, seaside destinations like Batumi become less attractive, leading to lower demand compared to Tbilisi.
