Marron Pastry Shop, which also operates under the brand "Didebuli Tortebi", has opened its fifth branch in Tbilisi. The new location, situated on Nutsubidze Street, marks the pastry chain’s second branch in Saburtalo, with an overall investment of USD 220,000, according to founder and pastry chef David Gorgoshidze.
Gorgoshidze told bm.ge that Marron Pastry plans to continue expanding within Tbilisi, while openings in other cities are not currently being considered.
“We want to expand in Tbilisi, not in other cities. The main challenge is finding a standalone building that can accommodate both the café and production area,” he said.
Following the opening of the new branch, the company’s staff increased to 180 employees, reflecting growing demand for its products. According to Gorgoshidze, Marron Pastry has seen 20% growth compared to last year, driven by improved management and quality control.
“Both our modern Marron line and the classic Didebuli Tortebi products are showing growth. The share of Marron in sales is increasing, and we’ve refined the brand further by importing all raw materials directly from Italian producer Mancinelli,” Gorgoshidze explained.
Despite the rise of Marron’s contemporary offerings, the pastry chef believes the classic cake line remains strong due to consumer habits:
“The traditional cakes remain very popular, and we don’t expect the modern line to overtake them soon. Georgian consumers are still deeply attached to the classics, though the next generation may think differently,” he said.
Founded in 2008, Didebuli Tortebi later launched the Marron Pastry brand, which now operates five locations across Tbilisi, in Didi Digomi, Digomis Masivi, Temka, Jikia Street, and Nutsubidze Street.
Notably, the company previously operated two branches in New York, which Gorgoshidze has since sold to finance a new international project. While he did not disclose the destination, he confirmed that work is already underway on this new venture.
