The brand’s core product remains roasted piglet, which accounts for the majority of orders. Its menu also features roasted chicken, rabbit, boiled meat, fish, khachapuri, lobiani, and other traditional Georgian dishes, often combined in a single order. To ensure quality, raw materials are primarily sourced from Western Georgia-Samegrelo and Imereti, regions known for high-quality pork.
Trapaidze highlighted that every order undergoes veterinary inspection and is prepared under strict hygiene standards. He noted that demand spikes during holidays and events, contributing to steady sales growth. While the market is competitive, Pitskina maintains an edge through product quality, traditional flavors, and customer-focused service.
Pricing depends largely on Western Georgian market conditions, which influence the cost of raw materials. Price increases for suppliers have ranged from 20% to 40%, but the company manages these fluctuations without compromising quality. Pitskina currently operates in Tbilisi but plans to expand both its menu and geographic reach while maintaining its focus on premium quality.
