"The businesses don’t consider restaurants as complex trade sectors, where every little wrong step is a small step towards the loss," – according to Luka Nachkebia, food technologist and restaurant developer.
As he notes, mastering new technologies is important for the restaurant business.
"We have a lot of good concepts, but these concepts open and close like most restaurants. The most important know-how that needs to be established over the years is that the industry needs to catch up with technology. This is one of the biggest black holes in our industry.
For some reason, recipes are evolving, but operating systems are not. It is developing in the world, but in Georgia, we do not accept it and we are trying to guess something, which in most cases is not successful," - Nachkebia explained.
