The first chicken restaurant "Tsitsila" changed its direction and as a result of the rebranding, became "Tsitsila, Grill and Bistro." The company's founder, Mariam Markhulia, spoke about this with BM.GE.
According to her, from the day of opening, the demand at their establishment exceeded expectations and gained great popularity in a short time. Their lunch menu and sandwiches became especially popular, accounting for up to 80% of sales. This became the reason why the company implemented rebranding and removed some chicken dishes from the menu.
"We changed the brand. Initially, our focus was to have all dishes made from chicken, but since sandwiches account for 80% of our sales and lunches are very popular, we became 'Tsitsila, Grill and Bistro.' We removed the remaining chicken dishes from the menu. Considering that there are many universities near our establishment, we thought our customers would be students, but it turned out that the majority of our customers are office workers," said the founder.
According to Markhulia, the portion sizes of their products at fast-food restaurant have increased. Along with the increase in portions, price adjustments became necessary to keep the establishment viable.
Considering the high demand for sandwiches, "Tsitsila, Grill and Bistro" started baking their own bread, for which they opened a new production facility on Gazapkhuli Street."We sell up to 250 sandwiches during the day. Therefore, we decided to open our own production facility where we would make our bread. We also make sauces in the same facility. Opening the new facility required minimal funds since the space was already adapted with the infrastructure needed for our operations," - said the founder.
Additionally, customers can purchase products through their website, which covers the entire scale of Tbilisi.
The Georgian chicken restaurant in Tbilisi, on Kostava Street, opened last year in May. The establishment also has online ordering capabilities.
